Commercial cooking loads vary widely
Commercial ovens, ranges, fryers, griddles, dish machines and HVAC loads can use single-phase or three-phase circuits at different voltages and currents. Use the equipment nameplate and engineered branch-circuit requirements before selecting a breaker.
Suppression-system interfaces
Some kitchen systems use shunt-trip breakers, contactors or other listed disconnect arrangements to remove power when a fire-suppression system activates. Do not assume every commercial cooking circuit requires the same shutdown method.
